Since this is going to be a long weekend, and a holiday and all..figured we could share some recipes for the grill, or picnic...whatever.

Here is a good butter that would go good with the seafood...



Compound Butter

1/2 cup of lobster base, sometimes available in bouillon cubes in specialty markets


1 tbsp fresh chopped cilantro


1 tsp finely minced garlic


1 tbsp white wine, any kind will do!


The juice squeezed from one half of a fresh lemon

1 stick of unsalted butter, melted and cooled slightly





Mix all of the ingredients together, making sure of an even consistency. Chill for about 5 minutes, or until the butter has solidified into a pliable dough-like texture. Place the butter on a piece of plastic wrap, and form into a sort of stick, rolled up tightly in the plastic. Place in the refrigerator and chill for about 2-3 hours, or until solid. Cut into slices to serve over hot shrimp. This is a great recipe, because if you do have butter left over, you can just place it in your freezer and eat it anytime over many different types of seafood or fish!
